Boudin (fully cooked pork and rice sausage, best if reheated by steam)
• Steam in kettle, remove casing, and eat on crackers
• Remove Casing, bread with Rour, and fry in hot oil for Boudin Balls
Andouille (fully cooked, coarse ground sausage)
• Great on the grill
• Mix in your jambalaya
• Tasty with a pot of brown beans
Tasso (a "se~s6ning°' meat, not to be eaten by itself)
• Mix in with greens
• Cook with your brown beans for seasoning
